Cherry Bakewell Flapjack Recipe

In our house we always bake flapjacks but I like to try and vary them when I can. The idea came to me to try and make a Cherry Bakewell Flapjack and it couldn’t have turned out better. All those classic Bakewell flavours but in flapjack form. It’s delicious!
How do you make easy Cherry Bakewell Flapjacks?
To make these Cherry Bakewell Flapjacks you simply need typical flapjack ingredients – porridge oats, sugar, butter and golden sugar. But, to make this recipe reminiscent of our favourite Cherry Bakewells, we add ground almonds and almond extract.

We bake this flapjack with a layer of cherry jam or cherry compote in the middle and when cooled we add a drizzle of simple glace icing and glace cherries. These fruity flapjacks are such an easy recipe but one that works so well.
For this cherry flapjack recipe we use a cherry jam or cherry compote in the centre which adds so much cherry flavour to the finished bake. If you wanted you could also add frozen cherries or dried cherries to the flapjack mixture for even more cherry flavour.
This old fashioned Cherry Bakewell Flapjacks recipe creates flapjacks that are a little bit more moist than traditional flapjacks and we find it’s best eaten with a fork rather than picking up and eating it. Although flapjacks never last long in our house, this bake does keep well in an airtight container for a few days.
This cherry and almond flapjack recipe is one that everyone loves. The children can’t get enough of it and it really is such a delicious bake.

Hereโs our Cherry Bakewell Flapjack Recipe:
Ingredients
- 440g Porridge Oats
- 80g Ground Almonds
- 275g Butter
- 155g Light Brown Sugar
- 155g Golden Syrup
- 2tsp Almond Extract
- 150g Cherry Jam or Cherry Compote
To decorate:
- Icing sugar
- Glace cherries
Instructions
- Preheat the oven to 180C and grease a suitable baking tin.
- Put the butter in a saucepan with the light brown sugar, golden syrup and almond extract. Melt in a pan over a low heat.
- Stir really well to make sure the mixture is melted together and well combined.
- Add the rolled oats and ground almonds to the melted syrup mixture and stir until completely covered and well mixed.
- Spread half the mixture onto the baking tray, making sure it is evenly spread.
- Spread an even layer of cherry jam over the flapjack mixture before topping with the rest of the flapjack mix. Bake for 25 minutes until golden brown.
- When fully cooled and still in the tin, mix the icing sugar with a little water and drizzle over the flapjack. Top with glacรฉ cherries.
- Slice and enjoy.
