White Chocolate Rocky Road Recipe

Rocky road is one of our favourite sweet treats. The whole family love it, it’s easy to make and you can chuck in pretty much anything you have to hand. One of the recipes we make most often is White Chocolate Rocky Road as it makes a nice change to traditional milk chocolate rocky road.

How to make Rocky Road

For this white chocolate rocky road recipe you just need white chocolate, mini marshmallows, digestive biscuits and glace cherries. It could not be easier.

You melt the chocolate, add the other ingredients and put the rocky road in the fridge to set. We usually leave it overnight but if you’re short of time then four hours works well as a minimum. Slice, serve and enjoy!

If you’d like to vary the recipe you can also add in dried fruit – dried cranberries work well – or use different kinds of biscuits. We love using Malted Milk biscuits when we have them – they go really nicely with the white chocolate.

You can also add things like desiccated coconut or nuts which add nice texture as well as flavour. Pistachios work well as pistachio nuts add a nice splash of colour to the rocky road and taste great too.

For this white rocky road recipe you don’t need to use good quality chocolate. We use the cheapest supermarket chocolate and it still tastes delicious. You also don’t need to add butter or golden syrup as I know a lot of recipes do. Simply using white chocolate gives a great finish and works really well.

White Chocolate Rocky Road Recipe

Here’s our tasty White Chocolate Rocky Road recipe:

Ingredients:

  • 500g white chocolate
  • 150g Digestive Biscuits, broken into pieces
  • 100g mini marshmallows
  • 100g glace cherries

Recipe:

  • Break up the chocolate bars into small pieces and put it in a large glass bowl
  • Melt chocolate using the glass bowl over simmering water or in the microwave using short blasts and stirring regularly.
  • Once melted, leave to cool slightly for a few minutes
  • In a separate bowl, mix the biscuit pieces with the marshmallows.
  • Pour in the melted chocolate and stir well.
  • Pour the chocolate mixture into a lined cake tin or brownie pan.
  • Put in the fridge to set for at least 4 hours.
  • Slice and serve.
