White Chocolate Rocky Road Recipe

Rocky road is one of our favourite sweet treats. The whole family love it, it’s easy to make and you can chuck in pretty much anything you have to hand. This White Chocolate Rocky Road makes a nice change to traditional milk chocolate rocky road.

Ingredients

  • 500 g white chocolate
  • 150 g Digestive Biscuits broken into pieces
  • 100 g mini marshmallows
  • 100 g glace cherries

Instructions

  • Break up the chocolate bars into small pieces and put it in a large glass bowl
  • Melt chocolate using the glass bowl over simmering water or in the microwave using short blasts and stirring regularly.
  • Once melted, leave to cool slightly for a few minutes
  • In a separate bowl, mix the biscuit pieces with the marshmallows.
  • Pour in the melted chocolate and stir well.
  • Pour the chocolate mixture into a lined cake tin or brownie pan.
  • Put in the fridge to set
