In our house we always bake flapjacks but I like to try and vary them when I can. The idea came to me to try and make a Cherry Bakewell Flapjack and it couldn’t have turned out better. All those classic Bakewell flavours but in flapjack form. It’s delicious!

Ingredients
440gPorridge Oats
80gGround Almonds
275gButter
155gLight Brown Sugar
155gGolden Syrup
2tspAlmond Extract
150gCherry Jam or Cherry Compote
To decorate:
Icing sugar
Glace cherries
Instructions
Preheat the oven to 180C and grease a suitable baking tin.
Put the butter in a saucepan with the light brown sugar, golden syrup and almond extract. Melt in a pan over a low heat.
Stir really well to make sure the mixture is melted together and well combined.
Add the rolled oats and ground almonds to the melted syrup mixture and stir until completely covered and well mixed.
Spread half the mixture onto the baking tray, making sure it is evenly spread.
Spread an even layer of cherry jam over the flapjack mixture before topping with the rest of the flapjack mix. Bake for 25 minutes until golden brown.
When fully cooled and still in the tin, mix the icing sugar with a little water and drizzle over the flapjack. Top with glacé cherries.
Slice and enjoy.
