Christmas Mincemeat Cupcakes Recipe

I love making festive treats at home that are a great alternative to mince pies or Christmas cake. These Christmas Mincemeat Cupcakes are just the thing and something the whole family will enjoy – and the children will love to bake too!

How should we enjoy Christmas Mincemeat Cupcakes?

These little mincemeat muffins are great to have cooled slightly from the oven or let cool completely and top with glace icing. They make a nice change to plain cupcakes and have a definite festive feel about them.

This is one of our favourite recipes using mincemeat and it’s great if you’re wondering what to do with leftover mincemeat after making mince pies. We really enjoy baking with mincemeat and bake as much as we can throughout December.

Can I decorate these Christmas fairy cakes?

You can decorate the muffin cups with gingerbread men, festive sprinkles or anything else you find in the baking section of the supermarket. I usually give this job to the kids and, topping the cakes with glace icing, simply made with icing sugar and water, means that they are really easy to decorate too. Fondant icing is another great option – and they’d be perfect for a festive afternoon tea too with glace cherries popped on top!

We have these muffins plain for breakfast, snacks or just a sweet treat over the festive season and they keep really well in an airtight container for a few days. They’re also lovely to give as gifts at the end of term or when you visit friends and family in the lead up to Christmas.

You could also remove the middle in this Christmas fairy cake recipe and give these little mince pie cupcakes a mincemeat centre or add extra dried fruit to add even more texture. Oh the options are limitless! I know we’ll be enjoying mincemeat filled muffins throughout the festive season.

What equipment do you need to make these little festive cakes?

You will no doubt have most of the equipment you need for this simple mincemeat buns recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:

Here’s our Christmas Mincemeat Cupcakes Recipe:

Ingredients

  • 4 eggs
  • 220 g caster sugar
  • 100 ml double cream
  • zest of 1 orange
  • 220 g mincemeat at room temperature
  • 220 g self raising flour
  • 1 tsp baking powder
  • 2 tsp mixed spice
  • 4 tsp brandy
  • 100 g melted butter

Instructions

  • Preheat oven to 180C/350F/Gas 4 and place paper liners in a muffin tin
  • Put all the ingredients into a large bowl and stir the cake mix well
  • Half fill the muffin cases with fairy cakes mixture and bake in the centre of the oven for 15 minutes or until golden brown.
  • Leave to cool completely on a wire rack.

These are a really lovely alternative to mince pies to have all the flavours of Christmas but in a cake instead of a pie.

Ingredients

  • 4 eggs
  • 220 g caster sugar
