Marble Sprinkle Loaf Cake Recipe

Quite often I make cakes that aren’t the most technical but the children love them and this Marble Sprinkle Loaf Cake is one just like that. Simple to make and full of colour, it never fails to make the kids happy.

What do you need to make this loaf cake recipe?

For this bright and beautiful but easy loaf cake you just need typical cake ingredients – eggs, flour, butter and sugar. For the marble rainbow middle we just add sprinkles to the batter which bleed as the cake cooks to make a lovely pattern.

To finish, we top with buttercream frosting and more sprinkles! I always buy ready made frosting for ease but you can definitely make your own. This is a great buttercream recipe and this one is dairy free too.

This sprinkle loaf cake is based on a basic vanilla loaf cake recipe but the added funfetti style sprinkles create a rainbow sprinkle bread that will never fail to make you smile. The rainbow sprinkles inside and out are easy to find in the shops and add a little something extra to what was originally intended to be a simple vanilla pound cake.

For this recipe we use self raising flour but you could use all purpose flour and a little baking powder instead if you prefer. We always use caster sugar for our bakes but granulated sugar would work too. We also use vanilla extract but you could use any other flavour you like that you think would compliment the rainbow colours of the finished bake.

This simple rainbow cake would make a lovely birthday cake but it’s also fantastic on any day, not just special occasions. If you’re short of time you don’t have to ice this bake either. You could instead serve the sprinkle cake plain or just with a dusting of powdered sugar.

What equipment do you need for this easy rainbow sprinkle loaf cake recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already. We use loaf tin liners to guarantee that bakes come out of the tin easily and they’re great when baking as gifts too but parchment paper works well too.

Marble Sprinkle Loaf Cake

So here’s our Marble Sprinkle Rainbow Loaf Cake Recipe:

Ingredients

  • 180g unsalted butter at room temperature
  • 180g caster sugar
  • 3 eggs
  • 200g self raising flour
  • 1 tsp vanilla essence
  • 50g sprinkles

To decorate

  • Sprinkles
  • Buttercream frosting

Recipe

  • Preheat oven at 160C/300F/Gas 2 and line a loaf pan
  • Cream together the butter and caster sugar in a mixing bowl
  • Add the rest of the ingredients and mix well
  • Pour the batter into a lined/greased loaf tin and bake in the middle of the oven for 50 minutes until brown on the top and a skewer comes out clean. Leave to cool completely on a wire rack.
  • Top with buttercream and sprinkles and enjoy.

Ingredients

Instructions
