Banana Blackberry Muffins Recipe

I love to bake and over the years we have made so manyr ecipes with over ripe bananas. I often add in other fruit – or even vegetables – to use up what we have leftover at home or growing in the garden. Our latest recipes is for Banana Blackberry Muffins – using fresh blackberries from our garden.

These blackberry banana muffins are easy to make, full of flavour and soimething the children love to have for breakfast, as an after school treat or even in their lunchboxes.
For this recipe you just need basic cake ingredients – self raising flour, melted butter, magarine or spread and caster sugar along with the mashed bananas and blackberries. We also add a little baking powder or baking soda to give the muffins an extra little boost. You can also use plain flour / all purpose flour but you’d just need to increase the amount of baking agent you use to compensate.
Although we use caster sugar most often, you can also make these muffins with brown sugarm golden caster sugar or granulated sugar – it’s a great recipe for using up whatever ingredients you have to hand.
Although we use fresh blackberries for this recipe you can always use frozen blackberries. They’d just give a more moist finish to the bake and would probably change the colour of the cakes more than using fresh berries.

Sometimes we do like to top the muffins with a handful of oatmeal or rolled oats and this creates lovely banana blackberry oatmeal muffins if you like that little added extra or a little variety. This is also a great recipe to use coconut oil or plain Greek yogurt in too, both work well in place of some or all of the butter.
These Blackberry and Banana Muffins always go down a treat with the whole family and I love making them to use up overripe bananas before they need throwing away!

What equipment do you need to make these fruit muffins?
You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:
- A 12 hole muffin tin
- Paper cake cases
- A large mixing bowl
- Scales
- A wooden spoon
- Measuring spoons
- A wire rack
These are pretty much staples for baking in any home kitchen and once you have them you won’t need to replace them often.

Here’s our easy recipe for delicious Banana and Blackberry Muffins:
Makes 18 muffins
Ingredients
- 4 eggs
- 200g butter/spread at room temperature
- 350g caster sugar
- 450g self-raising flour
- 2 tsp baking powder
- 3 overripe bananas
- 150g blackberries
Instructions
- Preheat oven 180C/Fan 160C/gas 4
- Line muffin tins with muffin cases
- Put all the ingredients, aside from the berries, in a large bowl and mix until combined.
- Stir in the blackberries.
- Spoon the banana mixture into the cake cases using an ice cream scoopand bake in the oven for 25-30 minutes until browned.
