Lemon Curd Flapjacks Recipe

Our latest bake is these Lemon Curd Flapjacks, a really easy twist on classic flapjacks and something that everyone will love. They have just the right amount of lemon flavour, keep that fantastic flapjack consistency and taste great.

How do you make this simple Lemon Curd Flapjack recipe?
These easy Lemon Curd Flapjacks are made with the basic flapjack ingredients of rolled oats, sugar, butter and golden syrup but with the added bonus of a lemon curd layer in the middle. We have tried using lemon zest and lemon juice in our lemon flapjack recipes but found that lemon curd works best for a classic bake and even lemon flavour.

For this easy lemon curd flapjack recipe we use light brown sugar which gives a lovely flavour to all our flapjack recipes but, granulated sugar or golden caster sugar work well too. You can really use whatever sugar you have to hand. And, although we use unsalted butter for our flapjacks, margarine works really well too.
We serve the flapjacks plain, straight out of the tin. But, if you prefer iced flapjacks, you can make a simple lemon drizzle with lemon juice and icing sugar in a small bowl that would give a lovely sweet and beautiful finish to the cooled flapjack – creating gorgeous lemon drizzle flapjacks. For us though, we just cannot wait to eat lemon flapjacks and they never last long enough to ice!

Flapjacks are always a great choice for a bake sale, buffet spread or for picnics and lunchboxes – we even have them for breakfast sometimes alongside a glass of milk! Plus, these easy lemon flapjacks last really well in an airtight container for a few days – if they’re not eaten sooner!

As you can see, it’s all things you probably have already – that is what makes flapjacks so simple and convenient to make.

Here’s our best Lemon Curd Flapjacks Recipe:
Ingredients
- 150g margarine or butter
- 150g soft brown sugar
- 90ml golden syrup
- 300g porridge oats
- 100g lemon curd
Instructions
- Preheat the oven to 160C/325F/Gas 3 and grease or line a suitable baking tin.
- Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
- Add the rolled oats and stir until combined.
- Spread half the oat mixture onto the baking tray, spread and press down firmly with a wooden spoon.
- Spread the lemon curd in an even layer before topping with the rest of the oat mixture, spreading out and pressing down again with the wooden spoon.
- Bake for 25 minutes until golden brown.
- Slice with a sharp knife whilst still warm and leave to cool completely in the baking tray.
