Almond Flapjack Recipe

Any regular reader will know that we love to make flapjacks. Flapjacks are such a moreish sweet treat, one that the whole family love and so we make them regularly. Most weeks we have a flapjack in the oven! Our latest back is a pretty basic but lovely almond flapjack that I thought I would share.

How do you make this almond flapjacks recipe?
Simple almond flapjacks use all the typical flapjack ingredients to make – sugar, butter, golden syrup and oats – but with a few extras thrown in – ground almonds, almond extract or almond essence and flaked almonds to finish it off. The three different almond additions mean that there’s a lot of depth of flavour throughout this traybake and everyone will appreciate the almond flavour.

Making gluten free flapjacks, vegan flapjacks and dairy free flapjacks
You could also try making almond butter flapjacks by adding some almond butter to the mix in place of a little of the butter and golden syrup. If you wanted to replace all of the butter with almond butter this would make these into gluten free flapjacks, vegan flapjacks and dairy free flapjacks. This is the next thing we’ll be trying!

This isn’t the most healthy almond flapjack recipe – is there really such a thing as healthy flapjacks? But, these easy almond flapjacks are delicious and you can add little extras like raisins for a raisin and almond flapjack recipe, apricots for apricot and almond flapjacks, dates for date and almond flapjacks or cherries for a cherry and almond flapjack recipe.
However, if you do add dried fruit to the mix be aware that you might need a little more of the butter, sugar and golden syrup mix as the fruit will draw liquid out of the bake and could make it a little crumbly.

We love this easy almond flapjack recipe for it’s versatility and simplicity. It can be varied if you like or just make as it is for a really lovely treat. Almond flapjacks are great as an after school snack, to enjoy alongside a cup of tea or to bake when you have friends over. A all round great bake whenever you need one.
Flapjacks keep well in an airtight container for a few days – although they never seem to last that long in our house!

You can make our best Almond Flapjack recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:
As you can see, it’s all things you probably have already – that is what makes flapjacks so simple and convenient to make. You’ll be making these Almond Flapjacks all the time!

Here’s our simple Almond Flapjack Recipe:
Ingredients
- 440g Porridge Oats
- 80g Ground Almonds
- 275g Butter
- 155g Light Brown Sugar
- 155g Golden Syrup
- 2tsp Almond Extract
- Flaked almonds
Instructions
- Preheat the oven to 180C and grease a suitable baking tin.
- Put the butter in a saucepan with the light brown sugar, golden syrup and almond extract. Melt in a pan over a low heat.
- Stir really well to make sure the mixture is melted together and well combined.
- Add the rolled oats and ground almonds to the melted syrup mixture and stir until completely covered and well mixed.
- Spread the mixture onto the baking tray, making sure it is evenly spread and press down firmly.
- Bake for 25 minutes until golden brown.
- Leave to cool fully in the tin, slice and enjoy.
