Almond Flapjack Recipe

Simple almond flapjacks use all the typical flapjack ingredients to make – sugar, butter, golden syrup and oats – but with a few extras thrown in – ground almonds, almond extract or almond essence and flaked almonds to finish it off. The three different almond additions mean that there’s a lot of depth of flavour throughout this traybake and everyone will appreciate the almond flavour.

Ingredients

  • 440 g Porridge Oats
  • 80 g Ground Almonds
  • 275 g Butter
  • 155 g Light Brown Sugar
  • 155 g Golden Syrup
  • 2 tsp Almond Extract
  • Flaked almonds

Instructions

  • Preheat the oven to 180C and grease a suitable baking tin.
  • Put the butter in a saucepan with the light brown sugar, golden syrup and almond extract. Melt in a pan over a low heat.
  • Stir really well to make sure the mixture is melted together and well combined.
  • Add the rolled oats and ground almonds to the melted syrup mixture and stir until completely covered and well mixed.
  • Spread the mixture onto the baking tray, making sure it is evenly spread and press down firmly.
  • Bake for 25 minutes until golden brown.
  • Leave to cool fully in the tin, slice and enjoy.
