Our latest bake is these Lemon Curd Flapjacks, a really easy twist on classic flapjacks and something that everyone will love. They have just the right amount of lemon flavour, keep that fantastic flapjack consistency and taste great.

Ingredients
150gmargarine or butter
150gsoft brown sugar
90mlgolden syrup
300gporridge oats
100glemon curd
Instructions
Preheat the oven to 160C/325F/Gas 3 and grease or line a suitable baking tin.
Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
Add the rolled oats and stir until combined.
Spread half the oat mixture onto the baking tray, spread and press down firmly with a wooden spoon.
Spread the lemon curd in an even layer before topping with the rest of the oat mixture, spreading out and pressing down again with the wooden spoon.
Bake for 25 minutes until golden brown.
Slice with a sharp knife whilst still warm and leave to cool completely in the baking tray.
