Super Easy Blueberry Fairy Cakes Recipe

Although we make Banana and Blueberry Fairy Cakes often, we can only make them when we have bananas going past their best. In between, we like to make simple blueberry cakes as a delicious treat whenever we feel like it.

What do you need for these little blueberry cupcakes?

For these blueberry fairy cakes you just need typical cake ingredients plus fresh blueberries although you could try using frozen blueberries instead. We also have these cakes straight from the oven without decorating them but you could dust them with icing sugar to make them a little bit more fancy. You could also top them with a simple cream cheese frosting too but we just love them plain.

A lot of people like lemon blueberry cakes and if you wanted to have a lemon flavour simply switch the vanille extract for lemon juice or a little lemon zest.

What equipment do you need to make these mini blueberry cakes?

You will no doubt have most of the equipment you need for this mini cakes recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:

Baking ingredients

  • eggs
  • unsalted butter at room temperature
  • caster sugar
  • self raising flour
  • 1tsp vanilla extract
  • blueberries

Recipe

  • Preheat oven to 180C/350F/Gas 4
  • Line a muffin tin with paper cake cases
  • Break the eggs into a mixing bowl and weigh them
  • Add the same weight of butter, caster sugar and self raising flour and mix well
  • Add the same weight of blueberries to the cake mix
  • Add one teaspoon of vanilla extract โ€“ I use 1tsp of vanilla for every 3 eggs
  • Beat well and spoon the cake batter into the paper cases
  • Bake for 15-18 minutes or until lightly browned and leave to cool on a wire rack

These blueberry cakes are a great way of using up leftover blueberries or you could use frozen ones if you wanted. Sweet, moist and delicious.

  • eggs

Instructions

  • Preheat oven to 180C/350F/Gas 4
  • Line a muffin tin with paper cake cases
