Super Easy Blueberry Fairy Cakes
These blueberry cakes are a great way of using up leftover blueberries or you could use frozen ones if you wanted. Sweet, moist and delicious.

- eggs
- unsalted butter at room temperature
- caster sugar
- self raising flour
- 1 tsp vanilla extract
- blueberries
Preheat oven to 180C/350F/Gas 4
Line a muffin tin with paper cake cases
Break the eggs into a mixing bowl and weigh them
Add the same weight of butter, caster sugar and self raising flour and mix well
Add the same weight of blueberries to the cake mix
Add one teaspoon of vanilla extract – I use 1tsp of vanilla for every 3 eggs
Beat well and spoon the cake batter into the paper cases
Bake for 15-18 minutes or until lightly browned and leave to cool on a wire rack
