Slow Cooker Chicken Gumbo Recipe

Do you ever cook chicken in the slow cooker? I love cooking something different in the slow cooker and this Chicken Gumbo is one of our new found favourites. It goes well with cooked rice but could be served with potatoes or over cauliflower rice instead and with a hearty salad on the side.

Slow Cooker Chicken Gumbo Recipe

This easy slow cooker gumbo recipe is so full of flavour – and one of the most flavoursome slow cooker recipes we have ever created. The seasoning is full of New Orleans flavours and cayenne is such a lovely cajun seasoning that works so well with the chicken sausage combination. You could use andouille sausage instead of the chorizo or smoked sausage for an authentic flavour and another level of flavour kick to the crockpot gumbo.

Gumbo traditionally has shrimps in it too but our family aren’t the biggest fans of seafood so we didn’t include them. If you like them though you could add shrimp or prawns easily to this recipe and diced tomatoes would be a nice addition too. Okra can be added too – again something our children’s aren’t keen on but a really traditional gumbo ingredient.

What chicken should we use in this crockpot chicken gumbo recipe?

We favour using chicken thighs in slow cooker recipes as they don’t dry out like chicken breasts do and they work so well in this easy chicken sausage gumbo. You could even use chicken legs in the crock pot gumbo if you wanted and remove the bones just before serving. Serve over warm rice and enjoy!

So here’s our Crock Pot Chicken Gumbo Recipe – enjoy!

Ingredients

  • 500 g diced chicken
  • 75 g chopped chorizo sausage
  • 75 g chopped smoked bacon
  • 1 onion sliced
  • 2 garlic cloves chopped
  • 2 tablespoons plain flour
  • 500 ml chicken stock
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 3 celery sticks chopped
  • 2 peppers sliced

Instructions

  • Spray a frying pan with oil and fry the chicken for a couple of minutes before adding the chorizo and bacon, frying until browned. Transfer to the slow cooker pot.
  • Fry the onion and garlic until softened and then stir in the flour. Add the herbs, stock and cayenne pepper and stir whilst bringing to the boil. Add to the slow cooker pot along with the celery and peppers.
  • Cook for 8 hours on low.

  1. I tried this today. We enjoyed it and even Esther cleared her plate. Chorizo and Cayenne gives a nice warmth without it being spicy. Thanks for sharing.
