I love cooking something different in the slow cooker and this Chicken Gumbo is one of our new found favourites. It goes well with rice but could be served with potatoes instead.

500gdiced chicken
75gchopped chorizo
75gchopped smoked bacon
1onionsliced
2garlic cloveschopped
2tablespoonsplain flour
500mlchicken stock
2bay leaves
1teaspoondried thyme
1/2teaspooncayenne pepper
3celery stickschopped
2pepperssliced
Instructions
Spray a frying pan with oil and fry the chicken for a couple of minutes before adding the chorizo and bacon, frying until browned. Transfer to the slow cooker pot.
Fry the onion and garlic until softened and then stir in the flour. Add the herbs, stock and cayenne pepper and stir whilst bringing to the boil. Add to the slow cooker pot along with the celery and peppers.
Cook for 8 hours on low.
