Chocolate Banana Flapjack Recipe

I’ve been looking for new ways to use up over ripe bananas that make a change from banana bread recipes and one evening the idea of banana flapjacks came to me and I just had to make them. We love flapjacks and I’ve learnt that you can put pretty much anything in them to make some great flavour combinations.

This chocolate banana flapjack was a bit of a happy accident as the children wanted a flapjack version of our banana and chocolate muffins. They weren’t expecting the chocolate to melt into the flapjack but it gives such a nice flavour throughout the bake.

Can you vary this flapjack recipe?

For this easy recipe we use a basic mix of sugar, butter and golden syrup to cover the oats but you could use maple syrup or even honey if you prefer. You could also add some dried fruit for some added texture and even leave out the chocolate if you’d rather have a plain banana flapjack without the underlying chocolate flavour. You could also switch the chocolate for peanut butter to make a lovely peanut butter banana flapjack.

The kids love baking and one of their favourite things is a flapjack. It’s always a foolproof recipe and although not a healthy one it’s one that can be made at home and enjoyed in no time at all. I think our children would eat it straight from the baking tin if given half a chance!

What equipment do you need for this flapjack recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already – that is what makes flapjacks so simple and convenient to make.

So here’s our delicious Chocolate Banana Flapjack recipe:

Ingredients

  • 2 overripe bananas, mashed
  • 200g margarine or unsalted butter
  • 200g soft light brown sugar
  • 120ml golden syrup
  • 400g porridge oats
  • 100g chocolate chips

Instructions

  • Preheat the oven to 160C/325F/Gas 3 and grease a suitable oven dish or baking tray.
  • In a pan, heat the butter, soft brown sugar and golden syrup until fully melted.
  • Put the porridge oats and mashed bananas in a large bowl and stir in the melted butter mixture until fully coated.
  • Add the chocolate chips and mix well.
  • Pour into the prepared tray and flatten out so it reaches all the edges and has a nice even finish.
  • Bake in the oven for 35 minutes until golden brown.
  • Slice whilst still warm and leave to cool in the baking tray.
