Slow Cooker Bacon and Chorizo Lentil Hotpot Recipe

I absolutely love a one pot slow cooker meal and for me a lentil hotpot is one of the best comfort foods and perfect served straight from the slow cooker with some crusty bread or toasted pitta. Unlike a traditional baked layered hotpot topped with potatoes, butter and cheese this is just a hearty one pot meal that the whole family will love.
This Slow Cooker Bacon and Chorizo Lentil Hotpot doesn’t freeze very well unlike other slow cooker recipes but it’s perfect for cooking a big batch of and going back for seconds!
This traditional bacon hotpot recipe is far from a slow cooker lentil soup and is more a healthy lentil stew and is one of our favourite slow cooker lentil recipes. This bacon and lentil stew is full of flavour and something even the children love.
If we don’t have any chorizo in the house we make it into a delicious slow cooker sausage lentil stew by throwing chopped up sausages into the mix instead. You could even make this into a veggie stew by omitting the chorizo altogether or including a meat substitute.
This really is our favourite easy lentil stew recipe and if you like it a bit wetter you can just add a bit more vegetable stock into the crock pot at the start. Chicken works well in this recipe too, you just need to fry it with the bacon and onions before adding to the slow cooker dish you can then substitute the vegetable stock for chicken stock to add a more intense flavour.

So here’s how we make our Slow Cooker Bacon and Chorizo Lentil Hotpot Recipe:
Ingredients
- 500 g red lentils although green lentils work well too
- 2 bay leaves
- 100 g chorizo diced
- 1 onion finely chopped
- 100 g streaky bacon chopped
- 1 tbsp flour
- 1 tsp paprika
- 100 ml vegetable stock
Instructions
- Put the lentils in the slow cooker and cover with water. Add the bay leaves, chorizo and an extra 100ml of water. Stir and cook on low for 6 hours.
- Fry the onion and bacon in a frying pan until browned. Add the paprika and flour and cook for a couple of minutes before stirring in the stock.
- Bring to the boil and add to the lentil mixture in the slow cooker pot.
- Cook for a further 30 minutes and serve.
