I absolutely love a one pot slow cooker meal and for me a lentil hotpot is one of the best comfort foods and perfect served straight from the slow cooker with some crusty bread or toasted pitta.

Ingredients
500glentils
2bay leaves
100gchorizo diced
1onionfinely chopped
100gstreaky baconchopped
1tbspflour
1st paprika
100mlvegetable stock
Instructions
Put the lentils in the slow cooker and cover with water. Add the bay leaves, chorizo and an extra 100ml of water. Stir and cook on low for 6 hours.
Fry the onion and bacon in a frying pan until browned. Add the paprika and flour and cook for a couple of minutes before stirring in the stock. Bring to the boil and add to the slow cooker pot.
Cook for a further 30 minutes and serve.
