Raspberry and White Chocolate Loaf Cake Recipe

I love a loaf cake and our latest creation is a simple white chocolate raspberry loaf cake recipe. It’s such an easy loaf cake to bake and is perfectlt for pretty much any occasion.

How do you bake a raspberry white chocolate loaf cake?

For this recipe we use plain flour, sugar and oil instead of butter or margarine. There’s also milk, an egg, white chocolate chips and raspberries. Although we tend to use chocolate chips you could just cut up white chocolate if you wanted to, making delicious white chocolate chunks in the mix!

We tend to use frozen raspberries but you can also use fresh raspberries, just be gentle with the mixing! I know a lot of people also like to add vanilla extract or vanilla essence to their bakes. Feel free to add a teaspoon if you like, we just prefer the bake without.

This delicious cake lasts well for a few days in an airtight container although I doubt it will last that long! It’s a bake the children absolutely love and that we bake often.

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already. We use loaf tin liners to guarantee that bakes come out of the tin easily and they’re great when baking as gifts too.

Raspberry and White Chocolate Loaf Cake Recipe

So here’s our easy Raspberry and White Chocolate Loaf Cake Recipe:

Ingredients

  • 235g plain flour
  • 225g caster sugar
  • 2 teaspoons baking powder
  • 150g raspberries
  • 1 egg
  • 185ml milk
  • 80ml oil
  • 100g white chocolates chips

Instructions

  • Preheat oven to 190C/Gas 5. Grease a loaf tin or use a loaf tin liner in a loaf pan.
  • Mix the flour, caster sugar and baking powder in a large mixing bowl before tossing through the raspberries.
  • Stir in the egg, milk and oil before adding the chocolate chips.
  • Pour the cake batter into the prepared loaf pan. 
  • Bake in the middle of the oven for 50-55 minutes until nicely browned and a skewer comes out clean.
  • Leave to cool completely and enjoy!
