The staff go above and beyond to make everyone feel at home and they ensure that everyone has the best time possible. I don’t think I stopped smiling all weekend.

The best thing about Potters holidays is that everything is included in the price you pay. Four meals a day, all your drinks - including wine, Prosecco, most spirits and soft drinks - great accommodation and so many activities.

I’ll write a full review soon but for now here’s a little Reel of our weekend
I always have a lot of questions about accommodati I always have a lot of questions about accommodation when we stay anywhere as a family so I thought I’d share this little tour of our room at @windjammerlanding which was a pretty perfect place to stay.

It’s the ‘Ocean View Two Bedroom’ which was like a little house, with an upstairs and downstairs, built into the hillside. Both rooms had outdoor space and their own shower rooms. Such a great option for a family.

AD - Press Tickets | We had such a nice day at @na AD - Press Tickets | We had such a nice day at @national_motor_museum despite the rain! The children loved the Little Beaulieu play area and we loved exploring the National Motor Museum and Top Gear exhibit before having a ride on the monorail! We went on an old open topped bus, explored the Beaulieu Manor House and loved the gardens.
Beaulieu is always a great day out - whatever the weather. This summer they have a whole ‘Summer of Fun’ planned, with activities most days - parades, bird shows and hundreds of sculptures within the grounds too. If you’re looking for a day out this summer definitely think about heading to Beaulieu.

With CGI ABBA and a live band, it’s like being at an ABBA concert 40 years ago but with modern lighting, effects and sound. ABBA look and sound real, it’s a mind blowing experience.
The set includes all the songs you know and love as well as a few less familiar ones.
You can’t take photos during the show which actually made a refreshing change. A whole arena focused purely on the show and soaking up the moment. It’s definitely something the four of us will always remember.
Now, I’m off to sing Dancing Queen all the way home.
AD - Press Trip | We had such a great day at @phdo AD - Press Trip | We had such a great day at @phdockyard today. They have a fantastic Ultimate Explorer ticket that lets you visit all the attractions as many times as you like for 12 months - and after a day at Portsmouth Historic Dockyard we can see that you need more than one day to really do everything!

We explored HMS Warrior, HMS Victory and the Mary Rose Exhibition - which is incredible! We also saw where ships are built and restored and spent time in Action Stations where the kids climbed and did an assault course.

Portsmouth Historic Dockyard is such a fun, educational day out with something for all ages - we can’t wait to go on their harbour tours next time we visit!

25+ Recipes with Biscoff Spread

Lotus Biscoff Spread is something we always have in the house. The children love it drizzled on ice cream or spread on pancakes and it’s turned into as much of a kitchen staple as peanut butter or chocolate spread. But, they are always asking me to make new things with their beloved Lotus Biscoff Cookie Butter.

So what else can you make with this delicious spread? Really, any recipe can have Biscoff added for extra flavour. Anything you can think of, you can make a Lotus Biscoff version. Here are a few Biscoff recipes and ideas to get you started.

Recipes Using Biscoff Spread

Fudge

One of our favourite things to make using Lotus Biscoff is our Slow Cooker Lotus Biscoff Fudge. Easy to make, it’s a treat that everyone who tries it really loves. Plus, you can make it in the microwave too. It’s so tasty and wonderful to give as a gift too. You can see all our fudge recipes here.

Cakes

Cakes are one of the simplest recipes to add Lotus Biscoff butter to and we have seen so many fantastic Biscoff cake recipes. Biscoff Loaf Cake, Biscoff Drip Cakes or beautiful Biscoff Layer Cakes. A Biscoff cake in any style is always a great idea.

Cupcakes

Biscoff cupcakes and muffins are another simple idea that can come in so many different varieties, many topped with Biscoff buttercream and a Lotus biscuit put on the top! Some of our favourites are Lotus Biscoff Cupcakes, Biscoff Muffins, Banana Biscoff Muffins and Biscoff White Chocolate Muffins.

Doughnuts

Doughnuts are always such a wonderful treat and you can get so many different flavours in the shops – including Lotus Biscoff doughnuts. But, you can also make them at home. We love Biscoff Donuts and Biscoff Filled Donuts.

Pancakes

Our latest Biscoff discovery is Lotus Biscoff Pancakes. With cookie butter spread in the pancake mix and also drizzled over the pancakes just before serving, they’re an indulgent treat perfect for a special occasion or just a weekend morning.

Brownies

Who doesn’t love a brownie? And what could make a brownie better than adding Biscoff to it! Biscoff brownies are utterly delicious and we have tried so many different recipes over the years. Such a great treat to bake when you have company. These Biscoff Brownie Bites are a fantastic, bite size alternative to traditional brownies.

Blondies

Blondies are a great, lighter alternative to brownies but still so rich and full of flavour. We love Biscoff Blondies and Biscoff White Chocolate Blondies, often baking them as a sweet treat the whole family can enjoy.

Cookies

Lotus Biscoff Biscuits and Lotus Biscoff cookies are another simple bake that everyone loves and they can be so many different styles – from soft in the middle to crunchy, fall apart cookies, ones for dunking and ones for eating slow and savouring. Some of our favourite recipes are the Biscoff Stuffed Cookies, 3 Ingredient Biscoff Cookies and Biscoff Butter Cookies. They all make a great alternative to boring chocolate chip cookies!

Truffles

Just like fudge, making your own chocolates and truffles is such an exciting pastime – and with a fantastic reward for your labour! Biscoff Truffles are one of the nicest things you can eat and we love No Bake Biscoff Truffles, Biscoff Truffles and 3 Ingredient Biscoff Truffles.

Shortbread

Like Millionaire’s Shortbread but with Lotus Biscoff, Biscoff Shortbread is a pretty indulgent treat and one that our children absolutely love. With three different flavours and textures, all working together, every mouthful is a dream come true.

Rice Krispie Treats

Biscoff Rice Krispie Treats are one of the children’s favourite things and they’d happily make them every weekend if we could. The Biscoff flavour works so well with the marshmallows and rice krispies and the bake always holds together really nicely too.

Cake Pops

If you’re feeling adventurous, Cake Pops are a great sweet treat to make. You can make Biscoff Cake Pops, Biscoff Cake Balls and even Biscoff Cakesicles. I haven’t been brave enough to give them a try just yet!

Rocky Road

One of my favourite things is Rocky Road and Biscoff Rocky Road is a great alternative to the classic recipe. I love that with Rocky Road you can basically just chuck everything in and it turns out delicious – and a Lotus Biscoff Rocky Road is no different. We also love a Lotus Biscoff Tiffin which is a similar idea.

Cheesecake

One of the nicest desserts you can have is a Lotus Biscoff Cheesecake. The combination of Lotus Biscoff cookie base, creamy cheesecake and a melted Biscoff Spread topping is pretty much heaven on a plate. Our favourite is this No Bake Biscoff Cheesecake.

Cinnamon Rolls

I don’t think I’ve ever met anyone who doesn’t love a cinnamon roll and adding Biscoff spread to the recipe just makes them even nicer! I’ve tried many great Biscoff Cinnamon Rolls recipes and there are even Vegan Biscoff Cinnamon Rolls recipes too.

Puff Pastry Swirls

Puff Pastry Swirls or Puff Pastry Pinwheels are one of our go-to snacks to make for the children after school and Biscoff Puff Pastry Swirls just add another level to them. Utterly delicious! I love easy Biscoff Swirls, Biscoff Swirls with Chocolate Chips and Biscoff and Chocolate Puff Pastry Swirls.

Mug Cake

Mug cakes are such a simple treat when you need something sweet but don’t have the enthusiasm to bake. Biscoff mug cakes are a wonderful snack and hit the spot perfectly.

Crumble

Crumble is one of my absolute favourite things and adding Biscoff to the ingredients really gives a crumble a much more indulgent flavour. A Biscoff and Apple Crumble is one of our favourite desserts.

Tiramisu

Yep, you can even make Biscoff Tiramisu! As I said, pretty much anything can have Biscoff added for a whole new flavour explosion. A Biscoff Tiramisu is just like the classic recipe but with added Lotus Biscoff flavour – and the coffee and Biscoff combination works really well.

Trifle

A Biscoff trifle is one of our favourite things to make, especially over the festive season. Extra indulgent and so creamy, it’s something that every trifle fan will love. There are so many different recipes to choose from as well – Biscoff Banoffee Trifle, Lotus Biscoff Cheesecake Brownie Trifle, Lotus Biscoff Hot Cross Bun Trifle – and many, many more!

Mousse

Mousses are often such a simple but decadent dessert, a lovely light option especially after a heavy meal. I love this easy 3 ingredient Biscoff Mousse, this Chocolate Biscoff Mousse and this incredible basic but delicious 2 ingredient Biscoff Mousse.

Ice Cream

Biscoff Ice Cream is amazing – we have bought it from the supermarket so many times. But, you can even make it yourself. Biscoff Ice Cream, Biscoff Caramel Ice Cream, Chocolate Biscoff Ice Cream and Vegan Biscoff Ice Cream are just a few options.

Ice Cream Cake

If you want to take your Biscoff Ice Cream up a level, why not make a Biscoff Ice Cream cake or Biscoff Ice Box Cake? Absolutely delicious and a great after dinner dessert, especially if it’s a special occasion. You could make a standard Biscoff Ice Cream Cake, a Biscoff Toffee Ice Cream Cake or, our favourite, a Biscoff Crispy Ice Cream Cake. Everyone will love it.

Milkshake

Milkshakes are one of our favourite things as a family and you can’t beat a Biscoff Milkshake. So easy to make and such a wonderful treat. Some of our favourites are this Vegan Biscoff Milkshake, a Biscoff Milkshake or this Lotus Biscoff Freakshake.

Hot Chocolate

Over the winter we love making all different kinds of hot chocolate and Biscoff Hot Chocolate is one we love. You could make Biscoff Hot Chocolate, Biscoff White Hot Chocolate or Biscoff Baileys Hot Chocolate.

Sauces

Making sauces from Lotus Biscoff Spread is super simple. You can just melt Biscoff spread and use it however you like. We’ve also mixed it with melted chocolate spread before for a chocolate biscoff sauce.

As a seasonal treat, how about Biscoff Cheesecake Easter Eggs? A chocolate easter egg shell full of delicious cheesecake filling and Biscoff flavour. Such a great option to make over Easter.

So there you have so many options for using Lotus Biscoff spread – or any unbranded speculoos cookie butter spread. Did you know you can even make your own? Here’s a recipe I found. If you know any other Biscoff Spread uses please do let me know and I’ll make sure to keep this post updated. For now, happy baking!
