Mini Banana Cakes Recipe

We are always making things with mashed ripe bananas and love to make banana muffins or banana cupcakes. But, I found some little fairy cake cases in the cupboard that were much smaller than the paper cases we would usually use. I thought it would be nice to make some bite size cakes and these mini banana cakes were born.
What are mini banana cakes?
These mini banana cakes are little snack size bakes that have all the flavour of a traditional banana cake. We’ve added fruit to them to give a little more texture and they are a great treat for picnics, a buffet spread, lunchboxes, breakfast or pretty much any time you fancy a sweet treat.
What do you need to make this mini banana cake recipe?
For this little banana fairy cakes recipe we use typical banana cake ingredients – margarine although you can use unsalted butter if you prefer, sugar, vanilla, eggs, self raising flour and, of course, mashed bananas. We also add a little yogurt to make the bake extra moist especially as it has the dried fruit in it.
Although we use self raising flour for these small banana cakes, you could use plain flour and a teaspoon baking powder or a teaspoon baking soda if you wanted. We also use caster sugar but granulated sugar or light brown sugar also work really well.
If you didn’t want to include the dried fruit you can use chocolate chips instead, add a little peanut butter or leave the cakes plain. We also often make banana blueberry fairy cakes by switching the dried fruit for frozen blueberries.
We enjoy these little cakes plain but you could also dust them with powdered sugar, drizzle them with icing or make a lovely cream cheese frosting if you wanted.
If you have mini bundt cake pans you could easily make a small batch of mini banana bundt cakes using this recipe, in any shape that you wish. Mini bundt cakes look great and it would be really nice to have banana ones too.

What equipment do you need to make these banana mini cakes?
You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:
- A 12 hole muffin tin
- Paper cake cases
- A mixing bowl
- Scales
- A wooden spoon
- Measuring spoons
- A wire rack
These are pretty much staples for baking in any home kitchen and once you have them you won’t need to replace them often.

Ingredients
- 110g margarine at room temperature
- 110g caster sugar
- 1 teaspoon vanilla extract
- 2 eggs, beaten
- 2 bananas
- 50ml yogurt
- 220g self raising flour
- 70g dried fruit
Recipe
- Preheat oven 190C/375F/Gas 5
- Cream the margarine, caster sugar and vanilla together in a large bowl before mixing in the eggs.
- Add the rest of the ingredients and mix well to create your cake batter.
- Line a muffin tin with paper muffin cases and fill each case nearly to the top with the banana mixture.
- Bake for 20 minutes or until risen and golden brown.
- Leave to cool completely on a wire rack.
