Vegan Dairy Free Slow Cooker Coconut Fudge

This is a super simple vegan and dairy free slow cooker fudge recipe with a lovely consistency and so much coconut flavour.

Ingredients

  • 400 ml condensed coconut milk
  • 400 g dairy free white chocolate – can be bars or vegan chocolate chips – at room temperature
  • 50 g desiccated coconut

Instructions

  • Break the chocolate up and add to the slow cooker bowl with the condensed milk.
  • Turn the slow cooker on to high and leave to cook for 40 minutes with the lid off, stirring every ten minutes.
  • When thick and well combined, stir in the dessicated coconut
  • Pour into a tin lined with parchment paper or silicone baking tray and put in the fridge to set – preferably overnight.
