Nectarine Crumble

I love a good crumble but they’re traditionally a bit of a winter pudding so when Sunburst got in contact to introduce us to their nectarines I thought a Nectarine Crumble recipe would be a great summer alternative to my winter favourites.

Ingredients

  • 400 g nectarines
  • 1 tsp vanilla extract
  • 80 g plain flour
  • 50 g butter
  • 75 g caster sugar
  • 15 g demerara sugar
  • 25 g porridge oats
  • 25 g chopped nuts

Instructions

  • Preheat the oven at 200C/400F/Gas 6
  • Stone and slice the nectarines and mix them in a bowl with 50g of the caster sugar, vanilla and 1 tbsp of the plain flour.
  • In a food processor mix the rest of the flour and the butter until it resembles breadcrumbs. Add the rest of the ingredients and mix.
  • Put the nectarine mix into an ovenproof dish and top with the crumble mixture. Bake for 25 mins or until golden brown on top.
  • Serve with custard, clotted cream or ice cream.
