Fruity Banana Muffins Recipe

The children love to bake and one thing we bake regularly is mini muffins – as they’re just so easy. They make a great breakfast or snack for the children and they freeze really well.

Ingredients

  • 230 g margarine
  • 230 g caster sugar
  • 1 tsp vanilla extract
  • 4 eggs beaten
  • 4 bananas
  • 100 ml sour cream
  • 450 g plain flour
  • 2.5 tsp baking powder
  • 0.5 tsp bicarbonate of soda
  • 140 g dried fruit

Instructions

  • Preheat the oven 190C/375F/Gas 5
  • Cream the margarine, caster sugar and vanilla before mixing in the eggs.
  • Add the rest of the ingredients and mix well.
  • Line a muffin tray with paper cases and fill each case nearly to the top with the cake mix.
  • Bake for 20 minutes or until risen and golden brown.
