Turkey, Sweetcorn and Bacon Pie

This is a great recipe to use leftover turkey and it's so simple to make as well. The whole family will love it.

Ingredients

  • 600 g potatoes boiled and made into mash
  • 500 g leftover turkey cut into chunks
  • 4 bacon rashers chopped
  • 200 g sweetcorn – frozen or canned
  • 150 g soft cheese – we used Primula
  • 150 ml chicken stock

Instructions

  • Preheat the oven 200C/400F/Gas 6
  • Heat a non stick pan and fry the bacon until browned. Add the turkey and sweetcorn.
  • Put the mixture into dishes – either one large family dish or individual dishes.
  • Mix the soft cheese and stock until it resembles a sauce and add to the dishes.
  • Spoon the mash on top and level out.
  • Place in the oven for 20 minutes or until golden brown on top.
