Servings 12 biscuits

Ingredients

  • 150 g butter at room temperature
  • 75 g caster sugar
  • 225 g self raising flour

Instructions

  • Preheat oven 180C/350F/Gas Mark 4
  • Lightly butter or line two baking trays.
  • Put all the ingredients in a bowl and mix well with a wooden spoon to bring the mixture together to form a cookie dough.
  • Portion the mixture out using a spoon or scoop, roll into balls and place on the baking trays about 2 inches apart. We use a teaspoon to measure the mix out – a little goes a long way! You should end up with little walnut sizes dough balls.
  • Press each dough ball down gently with a fork.
  • Bake for 15-20 minutes in the preheated oven until the cookies have spread and are golden brown on top.
  • Leave to cool slightly before transferring to a wire rack to cool completely.
