This apricot flapjacks recipe could not be easier. You need all the usual flapjack ingredients – light brown sugar, butter or margarine, golden syrup and porridge oats. And then you just add chopped dried apricots to the mix. It’s super easy but gives delicious results.

Ingredients
150gmargarine or butter
150gsoft brown sugar
90mlgolden syrup
300gporridge oats
200gdried apricotscut into small pieces
Instructions
Preheat the oven to 160C/325F/Gas 3 and grease or line a suitable baking tin.
Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
Add the rolled oats and dried apricots and stir until combined.
Spread the oat mixture onto the baking tray and bake for 25 minutes until golden brown.
Slice with a sharp knife whilst still warm and leave to cool completely in the baking tray.
