Slow Cooker Poor Man's Cassoulet recipe

This Slow Cooker Poor Man's Cassoulet is one of our favourite recipes and the children love it too - Who knew that sausages, pulses and bacon could taste so good?! It's also incredibly easy to double up and make more of!

Ingredients

  • Spray oil
  • 2 onions chopped
  • 2 garlic cloves chopped
  • 2 rashers of streaky bacon chopped,
  • 8 sausages
  • 400 g tin of pulses - haricot or black eyed beans are favourites here but you can use anything.
  • 150 ml beef stock

Instructions

  • Spray a large pan with oil and cook the onions for a couple of minutes. Add the garlic, bacon and sausages until browned.
  • Transfer everything to the slow cooker pot. Add the beans and stock.
  • Cook on low for 6 hours.
  • Serve with crusty bread or mashed potatoes
