Slow Cooker Chicken & Lentil Curry
This is such a hearty curry that can be simply served with bread if you want a nice one pot meal.

- 1 large onion chopped
- 2 garlic cloves chopped
- 1 teaspoon of dried chilli flakes
- 800 g diced chicken
- 200 g lentils
- 600 ml chicken stock
- 300 ml coconut milk
- 2 tsp ground ginger
- 2 tsp ground cumin
- 1 tsp coriander
- 10 cardamom pods
Heat a frying pan and spray with oil. Cook the onion for a couple of minutes. Add the garlic and chicken and cook until browned.
Transfer to the slow cooker pot and add the rest of the ingredients. Stir, cover with the lid and cook on low for 6 hours.
