Mincemeat Thumbprint Cookies

We love finding alternative ways to use mincemeat and creating twists on classic recipes. Traditional thumbprint cookies are one of the simplest bakes to make – especially when baking with children – so we thought we’d create a Mincemeat Thumbprint Cookies recipe for you to enjoy over the festive season at home.

Ingredients

  • 200 g butter or margarine
  • 200 g caster sugar
  • 300 g plain flour
  • 200 g mincemeat

Instructions

  • Preheat the oven to 180C/350F/Gas 4
  • Cream the butter and caster sugar in a bowl.
  • Add the flour and mix well.
  • Scoop the dough into balls and place evenly spaced on a baking sheet. Press down the centre of each one with your thumb.
  • Fill the dents with mincemeat and baking in the centre of the oven for 15 minutes until starting to brown.
  • Leave to cool completely before enjoying.
