I am now a little bit addicted to making jam. I am limited to strawberry at the moment though as we have so many growing in our garden – this will definitely turn into something I make every year so I thought I would share my recipe.

Ingredients
1kgstrawberries
2tablespoonslemon juice
1kgpreserving sugar for fruit low in pectin
10gbutter
Instructions
Prepare the strawberries by removing the stalks and halving if large.
Put half the strawberries in a pan and break up with a potato masher.
Add the rest of the strawberries and lemon juice then heat until the fruit has softened – Around 10-15 minutes.
Add the sugar and bring to the boil, stirring so the sugar breaks up. Heat until the setting point has reached (105c) – This usually take around 15 minutes for me.
Skim the surface of the mixture or add 10g of butter . When dissolved take the jam from the heat and leave for 5 minutes before putting into sterilised jars.
