I love nothing more than a good biscuit and decided to bake some coconut biscuits recently but then Hubby had the idea of dunking them in chocolate. Why not? So here is the recipe for the finished Chocolate Dipped Coconut Biscuits.

Ingredients
500gplain flour
120gself raising flour
175gsugar
100gdesiccated coconut
175gbutter
175ggolden syrup
1egg
400gmilk chocolate
Instructions
Preheat the oven 170C/350F/Gas 4.
Mix the flours, sugar and coconut together in a bowl before rubbing in the butter with your fingertips until it resembles fine breadcrumbs.
Make a well in the centre and add the egg and golden syrup before mixing well.
Chill for at least an hour before rolling out and cutting into shapes.
Bake for 15 minutes or until lightly browned. Leave to cool completely on a wire rack.
Melt the chocolate in a mixing bowl above a saucepan of boiling water.
Dunk the biscuits into the melted chocolate and leave to set on a baking tray lined with greaseproof paper.
Put in the fridge to set completely.
