Caramelised Onion Pigs in Blankets
A great twist on a classic traditional recipe. These Caramelised Onion Pigs in Blankets are fantastic with Christmas dinner or as a buffet addition.

- 270 g cocktail sausages or you can use chipolata sausages for bigger pigs in blankets! - 18 sausages
- 200 g smoked streaky bacon rashers - 9 rashers
- 200 g caramelised onion relish
Preheat the oven to 180C and line an oven dish with foil
Cut each rasher of streaky bacon in half and wrap around a sausage, securing with a cocktail stick if needed. Repeat, placing them in the oven dish.
Bake the pigs in blankets for 20 minutes before pouring away the excess fat from the dish.
Pour the caramelised onion relish over the sausages.
Place back in the oven for another 15-20 minutes until the sausages are nicely golden browned.
Remove sausages from the dish, giving them one last coat in the marinade.
