Apple and Mincemeat Flapjacks

Aside from being a great way of using up mincemeat, this flapjack is so full of flavour and a flavour combination that most people will like. It’s a great easy festive alternative to mince pies and such a lovely sweet treat to enjoy around Christmas.

Ingredients

  • 200 g margarine or butter
  • 200 g soft brown sugar
  • 120 ml golden syrup
  • 400 g porridge oats
  • 200 g mincemeat
  • 100 g dried apple

Instructions

  • Preheat the oven to 160C/325F/Gas 3 and grease a suitable baking tray
  • Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
  • Add the porridge oats, mincemeat and apple and stir until combined.
  • Spread mixture onto the baking tray and bake for 25 minutes until golden brown.
  • Slice whilst still warm and leave to cool in the baking tray.
