Caramelised Onion Pigs in Blankets

A great twist on a classic traditional recipe. These Caramelised Onion Pigs in Blankets are fantastic with Christmas dinner or as a buffet addition.

Ingredients

  • 270 g cocktail sausages or you can use chipolata sausages for bigger pigs in blankets! - 18 sausages
  • 200 g smoked streaky bacon rashers - 9 rashers
  • 200 g caramelised onion relish

Instructions

  • Preheat the oven to 180C and line an oven dish with foil
  • Cut each rasher of streaky bacon in half and wrap around a sausage, securing with a cocktail stick if needed. Repeat, placing them in the oven dish.
  • Bake the pigs in blankets for 20 minutes before pouring away the excess fat from the dish.
  • Pour the caramelised onion relish over the sausages.
  • Place back in the oven for another 15-20 minutes until the sausages are nicely golden browned.
  • Remove sausages from the dish, giving them one last coat in the marinade.
