Slow Cooked Lamb Hotpot
We were recently asked to share a back to school recipe using Welsh Lamb. You see, Welsh Lamb is great brain food, has a really high iron content and is a good source of vitamin B12, making it perfect back to school meals. We created a Lancashire Lamb Hotpot using Welsh Lamb and the kids loved it.

- 500 g lamb cut into chunks
- 500 g potatoes sliced
- 2 onions sliced
- 1 tsp dried thyme
- 350 ml lamb stock
- 150 g mushrooms
- 2 peppers deseeded and sliced
- 200 g carrots
Preheat the oven to 170C/325F/Gas 3
Arrange the lamb, potatoes, mushrooms, peppers and carrots in layers in a casserole dish and sprinkle thyme on each layer. Finish with a layer of potatoes and pour over the stock.
Put the lid on the casserole dish and cook in the oven for 2.5 hrs or until the meat is tender.
Serve with green vegetables.
