Slow Cooked Lamb Hotpot

We were recently asked to share a back to school recipe using Welsh Lamb. You see, Welsh Lamb is great brain food, has a really high iron content and is a good source of vitamin B12, making it perfect back to school meals. We created a Lancashire Lamb Hotpot using Welsh Lamb and the kids loved it.

Ingredients

  • 500 g lamb cut into chunks
  • 500 g potatoes sliced
  • 2 onions sliced
  • 1 tsp dried thyme
  • 350 ml lamb stock
  • 150 g mushrooms
  • 2 peppers deseeded and sliced
  • 200 g carrots

Instructions

  • Preheat the oven to 170C/325F/Gas 3
  • Arrange the lamb, potatoes, mushrooms, peppers and carrots in layers in a casserole dish and sprinkle thyme on each layer. Finish with a layer of potatoes and pour over the stock.
  • Put the lid on the casserole dish and cook in the oven for 2.5 hrs or until the meat is tender.
  • Serve with green vegetables.
