Jam Lattice Pastries
These are such a satisfying bake - easy to make but look fantastic.

- 500 g puff pastry
- jam
- sugar
Preheat the oven to 200C/400F/Gas 6
Roll the pastry out to 0.5cm thick and cut the bases of your pastries to the desired size. Put on a baking sheet.
Gather the trimmings and roll the pastry out again. Cut the tops of the pastries to the same size as the base sections.
Cut each piece with the lattice cutter before trimming off three lines of lattice, making them the right size to spread across the bases.
Put the bases on a greased baking tray - or one lined with baking paper or baking parchment.
Add a heaped teaspoon of jam to each pastry base and then top with the lattice pastry.
Open each of the lattice lids up so it fits across the base and then press all four edges down with a fork.
Sprinkle with sugar if desired and then bake for 15-18 minutes or until well risen and golden.
Leave to cool for a few minutes before serving.
