Jam Lattice Pastries

These are such a satisfying bake - easy to make but look fantastic.

Ingredients

  • 500 g puff pastry
  • jam
  • sugar

Instructions

  • Preheat the oven to 200C/400F/Gas 6
  • Roll the pastry out to 0.5cm thick and cut the bases of your pastries to the desired size. Put on a baking sheet.
  • Gather the trimmings and roll the pastry out again. Cut the tops of the pastries to the same size as the base sections.
  • Cut each piece with the lattice cutter before trimming off three lines of lattice, making them the right size to spread across the bases.
  • Put the bases on a greased baking tray - or one lined with baking paper or baking parchment.
  • Add a heaped teaspoon of jam to each pastry base and then top with the lattice pastry.
  • Open each of the lattice lids up so it fits across the base and then press all four edges down with a fork.
  • Sprinkle with sugar if desired and then bake for 15-18 minutes or until well risen and golden.
  • Leave to cool for a few minutes before serving.
