Slow Cooker Chicken and Chorizo Casserole

This is a great one pot meal that works well served with crusty bread, mash, roast potatoes or pretty much anything else you feel like!

  • 8 chicken drumsticks
  • 300 g chopped chorizo
  • 1 onion sliced
  • 1 tsp ground coriander
  • 1 tsp dried thyme
  • 2 peppers chopped
  • 1 courgette sliced
  • 2 garlic cloves crushed
  • tin of chopped tomatoes
  • 100 ml chicken stock
  • 60 ml sherry


  • Fry the chicken and chorizo until browned and put into the slow cooker pot.
  • Fry the onion for a couple of minutes. Add the coriander, thyme, peppers, courgette and garlic and cook for another five minutes. Add the rest of the ingredients and bring to the boil. Add to the slow cooker pot.
  • Cook on low for 8 hours.
