Slow Cooker Chicken & Lentil Curry

This is such a hearty curry that can be simply served with bread if you want a nice one pot meal.

  • 1 large onion chopped
  • 2 garlic cloves chopped
  • 1 teaspoon of dried chilli flakes
  • 800 g diced chicken
  • 200 g lentils
  • 600 ml chicken stock
  • 300 ml coconut milk
  • 2 tsp ground ginger
  • 2 tsp ground cumin
  • 1 tsp coriander
  • 10 cardamom pods


  • Heat a frying pan and spray with oil. Cook the onion for a couple of minutes. Add the garlic and chicken and cook until browned.
  • Transfer to the slow cooker pot and add the rest of the ingredients. Stir, cover with the lid and cook on low for 6 hours.
