Homemade Scotch Eggs

This is a recipe that reminds me of my childhood - My Mum would make scotch eggs every so often and they were the loveliest treat and something I always looked forward to.

Ingredients

  • 6 eggs
  • 600 g sausage meat
  • breadcrumbs

Instructions

  • Boil 6 eggs until hard boiled - I usually boil them and forget about them for a while!
  • Remove the eggs from their shells and preheat the oven to 200C/400F/Gas 6
  • Divide the sausage meat into 6 even portions. Flatten one portion in the palm of your hand and wrap an egg in it, smoothing over any joins. Repeat with all the eggs.
  • Pour breadcrumbs onto a plate and roll each covered egg in them until coated. Repeat until each egg is covered.
  • Place eggs on a grill tray (This lets the fat come out of the eggs whilst cooking without the eggs sitting in it) and cook for 40 minutes, turning halfway through.
