Festive Bakewell Tart Recipe
A Bakewell Tart is such a classic recipe that I thought I'd try it with a festive twist using Christmas jam. If you'd rather, use normal jam for a classic bake. You can also make your own pastry case but I like to use ready made ones to save time - plus I'm a little bit useless at making pastry!

- Ready made sweet pastry case
- 100 g Mackays Christmas Preserve with Mulled Wine
- 100 g margarine
- 125 g caster sugar
- 3 eggs beaten
- 1/2 tsp almond extract
- 150 g ground almonds
- 80 g self raising flour
- 20 g flaked almonds
Preheat the oven to 180C/350F/Gas 4
Spread the preserve over the base of the pastry case.
Cream the margarine and sugar before adding the eggs and mixing well.
Add the almond extract and ground almonds, folding to add air to the mixture.
Pour into the pastry case and sprinkle the flaked almonds over the top.
Bake for approx 30 minutes until golden brown.
