Festive Bakewell Tart Recipe

A Bakewell Tart is such a classic recipe that I thought I'd try it with a festive twist using Christmas jam. If you'd rather, use normal jam for a classic bake. You can also make your own pastry case but I like to use ready made ones to save time - plus I'm a little bit useless at making pastry!

Ingredients

  • Ready made sweet pastry case
  • 100 g Mackays Christmas Preserve with Mulled Wine
  • 100 g margarine
  • 125 g caster sugar
  • 3 eggs beaten
  • 1/2 tsp almond extract
  • 150 g ground almonds
  • 80 g self raising flour
  • 20 g flaked almonds

Instructions

  • Preheat the oven to 180C/350F/Gas 4
  • Spread the preserve over the base of the pastry case.
  • Cream the margarine and sugar before adding the eggs and mixing well.
  • Add the almond extract and ground almonds, folding to add air to the mixture.
  • Pour into the pastry case and sprinkle the flaked almonds over the top.
  • Bake for approx 30 minutes until golden brown.
