Apple Fairy Cakes Recipe
Apple fairy cakes are a great way of using up leftover apples and are great for breakfast, lunchboxes or picnics. Full of flavour and easy to make.
Servings: 12 cakes
- 170 g unsalted butter or margarine at room temperature
- 170 g brown sugar
- 1 tsp vanilla extract
- 170 g self raising flour sifted
- 3 eggs
- 2 apples peeled, cored and finely chopped
Preheat oven to 200C/400F/Gas 7
Line a muffin tray with paper cases.
Put all the ingredients in a large bowl and mix well.
Spoon the mixture into the paper cases and bake for 20 minutes and golden brown.
Leave to cool and enjoy.
