Ingredients

  • 300 g unsalted butter or margarine at room temperature
  • 300 g brown sugar
  • 4 tsp ground ginger
  • 1 tsp vanilla extract
  • 30 g golden syrup
  • 300 g self raising flour sifted
  • 3 eggs
  • 100 g glacĂ© ginger

Instructions

  • Preheat oven to 200C/400F/Gas 7
  • Line a muffin tray with paper cases.
  • Put all the ingredients in a large bowl and mix well.
  • Spoon the mixture into the paper cases and bake for 20 minutes and golden brown.
  • Leave to cool and enjoy.
