Banana Passionfruit Muffins

These Banana Passionfruit Muffins are a great way to use up leftover bananas and the passion fruit adds a really lovely texture and flavour to the finished bake. Perfect for breakfast or a sweet treat at any time of the day.

  • 4 eggs
  • 200 g butter/spread at room temperature
  • 350 g caster sugar
  • 450 g self-raising flour
  • 2 tsp baking powder
  • 3 overripe bananas
  • Passionfruit pulp from 4 passion fruits


  • Preheat oven 180C/Fan 160C/gas 4
  • Line muffin tins with muffin cases
  • Put all the ingredients in a large bowl and mix until combined.
  • Spoon the banana mixture into the cake cases in the muffin pan and bake in the oven for 25-30 minutes until browned.
