Mincemeat Middle Cupcakes

We decided to create mincemeat middle cupcakes as a twist on a jammy middle cupcake recipe and they’ve turned into something lovely to enjoy baking with the children over the festive season.

Ingredients

  • 280 g self raising flour
  • 175 g caster sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 75 g melted butter or margarine
  • 80 g mincemeat
  • icing sugar

Instructions

  • Preheat the oven to 200C/400F/Gas 6
  • Line a muffin tray with cupcake cases
  • Put the flour, sugar, eggs, vanilla and butter in a bowl and mix well.
  • Share half the mixture between the cupcake cases
  • Put a teaspoon of mincemeat on top of the mixture in the centre of each cupcake case
  • Share the remaining batter between each of the cupcake cases, covering the mincemeat
  • Bake for 20 minutes until risen and golden brown
  • Leave to cool completely before dusting with icing sugar
