Jam Sandwich Biscuits
These biscuits are such a lovely bake to make with children. They're simple but look great too - and taste pretty lovely as well.

- 300 g plain flour
- 100 g ground almonds
- 0.5 tsp salt
- 200 g margarine
- 200 g caster sugar
- 2 egg yolks
- jam
Preheat the oven to 180C/350F/Gas 4
Beat the margarine and sugar until soft, light and fluffy before beating in the egg yolks.
Fold in the flour, almonds and salt.
Knead the dough on a lightly floured surface and roll out to 0.5cm thick. Cut circles from the dough and place on a greased baking sheet.
Cut holes out of the centre of half the biscuits – I chose to make star shaped holes.
Prick the top of the dough circles with a fork and bake in the oven for 15 minutes or until golden. Cool on a wire rack.
When cooled, place a teaspoon of jam on top of each of the complete biscuits and place a biscuit with a hole on top.
