Slow Cooker Poor Man's Cassoulet recipe
This Slow Cooker Poor Man's Cassoulet is one of our favourite recipes and the children love it too - Who knew that sausages, pulses and bacon could taste so good?! It's also incredibly easy to double up and make more of!

- Spray oil
- 2 onions chopped
- 2 garlic cloves chopped
- 2 rashers of streaky bacon chopped,
- 8 sausages
- 400 g tin of pulses - haricot or black eyed beans are favourites here but you can use anything.
- 150 ml beef stock
Spray a large pan with oil and cook the onions for a couple of minutes. Add the garlic, bacon and sausages until browned.
Transfer everything to the slow cooker pot. Add the beans and stock.
Cook on low for 6 hours.
Serve with crusty bread or mashed potatoes
