Slow Cooker Spicy Lentil and Sausage Hotpot Recipe

- Spray oil
- 8 sausages halved
- 1 onion
- 1 tbsp paprika
- 3 cloves of garlic
- pinch of dried chilli flakes
- a good sprinkle of dried rosemary
- 2 celery sticks finely chopped
- 3 peppers deseeded and finely chopped
- 200 g red lentils rinsed
- 450 ml chicken stock
Spray a large pan with oil and brown the sausages. Add to the slow cooker pot.
Spray the pay again with oil, add the onion and cook for a couple of minutes. Add the paprika, garlic, chilli flakes and rosemary as well as the celery and peppers. Cook for 5 minutes.
Stir in the lentils, add the stock and bring to the boil. Add everything to the slow cooker on top of the sausages.
Cover and cook on low for 8 hours.
Serve with crusty bread or toasted pitta.
