Slow Cooker Turkey and Sausage Stew Recipe

This is such a budget friendly hearty family meal and it can be cooked after Christmas but also enjoyed throughout the year.

Ingredients

  • Spray oil
  • 1 turkey drumstick
  • 4 smoked streaky bacon rashers diced
  • 200 g sausages - Each cut into 4 pieces
  • 1 onion - sliced
  • 1 leek sliced - green and white parts kept seperate
  • 2 tablespoons plain flour
  • 600 ml chicken stock
  • small bunch of mixed herbs or a sprinkle of dried!
  • 300 g carrots sliced or chunked
  • 2 celery sticks sliced

Instructions

  • Check the drumstick fits in your slow cooker pot. If not, cut the 'knuckle' off using a large knife and hitting it with a rolling pin. Be careful.
  • Heat a frying pan and spray with oil. Fry the turkey drumstick, sausages and bacon pieces until browned. Transfer to the slow cooker pot.
  • Fry the onion and white part of the leeks until softened, stir in the flour and then add the stock. Add the herbs and bring to the boil.
  • Add the carrots and celery to the slow cooker pot and pour over the onion mixture. Cover and cook on high for 5-6 hours or until the turkey is falling off the bone. Remove the turkey from the pot, discard any bones and break the turkey into pieces before returning to the slow cooker pot along with the green parts of the leeks.
  • Cook for a further 30 mins. Dumplings can be added for the last 30 mins or serve with bread or potatoes.
