Servings: 12 slices
- 250 g butter at room temperature
- 125 g caster sugar
- 1 tsp vanilla
- 350 g plain flour
- 300 g mincemeat
To finish
- A little granulated sugar or caster sugar
Preheat oven to 180C/350F/Gas 4
Grease or line a baking tin. I use an 8 inch square one.
Cream the butter and caster sugar in a bowl with the vanilla.
Add the flour and mix well until it comes together to form a dough.
Roll or press half of the dough into the base of the tin.
Spread mincemeat over the dough.
Roll out the rest of the dough and press on top of the mincemeat layer. Prick all over with a fork.
Bake in the centre of the oven for 30-35 minutes until lightly golden browned and then remove from the oven.
Sprinkle with sugar and leave to cool completely in the tin before cutting into squares or slices.
